Vegetable Garden 2010

My favorite new addition to the deck. I got this set at IKEA for a very reasonable price. You can see I was reading my textbook this morning while enjoying a cup of tea. If I forgot to mention, I'm taking an Advanced Technical Writing class through NAU this semester. I thought I'd take advantage of the free class benefit...my first homework is due this Tuesday; I'll let you know after that if I think it is still a great idea.


Out with my friends Sabrina and Sonia on Friday night. We went to dinner and saw Sex and the City II. Fun evening, but the 1st movie was much better!


Jason had an amazing trip to South Korea and China. He took a lot of pictures and is planning to post shortly about his experience in Asia. I cooked him some yummy whole wheat pancakes this morning. I love pancakes, but since cutting out white flour and sugar about six months ago it has been a little more difficult. Here is the recipe for those who are interested.

Whisk together:
1.5 cups whole wheat flour
3 tablespoons Splenda (you can use sugar if you prefer)
1.5 teaspoons baking powder
.5 teaspoon baking soda
.5 teaspoon salt
.5 cup of old-fashioned oats

In a separate bowl whisk together:
1.5 cups milk
1 tablespoon unsweetened apple sauce or canola oil
1 whole egg
1 egg white
.5 teaspoon vanilla extract

Add the liquid mixture to the dry mixture. Stir together until moistened fully. Let the mixture sit on the counter for about 15 minutes before cooking.

You could also add some chocolate chips or blueberries to the mixture. We are partial to the dark chocolate chips in our house. This does add some sugar to the recipe, but well worth it:)

Serve with butter, maple syrup and fresh fruit like cut strawberries or bananas. If you don't already have some in your fridge, pick up real maple syrup and ditch the corn syrup goo. We got Coombs Family Farms organic maple syrup and it is delicious!
